HUDSON — A certified organic, fermented foods operation will soon join the Hudson community as Hawthorne Valley Association relocates its fermentation business from the Ghent-based farm.

The project application for a warehouse on 124 N. Second St. was approved by members of the Hudson Planning Board on March 9.

“Hudson is such a microcosm of the county right now and we’re looking forward to being grounded here,” Farm Production Enterprises Director Andreas Schneider said. “The space is much bigger and is going to allow us to expand as much as we need to.”

Hawthorne Valley Association created a for-profit subsidiary company, Whitethorne LLC, to develop the building and operate the business from Hudson once complete.
