Josephine Proul, chef and owner, IS Local 111, Philmont’s renowned farm to table restaurant. She is professional, community-minded, and nationally recognized in her field for excellence. For many years Local 111 has been the go to restaurant for my wife Lynda and I, in fact, we had our wedding reception there over 9 years ago.

Chef Jo is a lot of fun but also a very determined person. When NY Pause went into effect we saw from a distance the struggles, careful thought, and hard work that Josephine, and people from her crew she managed to retain, put into doing take out, retail, and then re-opening. All along the way, she has communicated transparently her emotions, concerns, process and we have been privileged to have this window into what it is like for a small business owner who really does want the best for their patrons, their community, and also wants the business they have built with blood, sweat, and tears over the years to survive.

A couple of weeks ago, Lynda and I ventured out to dine indoors at Local 111. We were nervous but soon felt very comfortable with the precautions and the seating. We also felt welcomed and cared for by Jo and her professional staff. It was so good to see the mostly familiar faces again.

I love that I feel safe at Local 111 with all the measures they’ve taken because of the pandemic. Grilled bass and baby kale salad with Baked Alaska for dessert! Good health for all the senses and for the spirit. Something normal and wonderful in the midst of so much chaos in our lives. And, because it’s Jo: Local is Philmont Strong and New York Tough.
